Kaji Mart, founded in 1951, is a community-based supermarket. There are six stores in Ishikawa Prefecture and one store in Fukui Prefecture, including a store opened in the Meitetsu Emuza Department Store, Kanazawa. Opening a local supermarket in department store is rare in Japan.
Founder of the Kaji Mart, Mr. Kazi Yoichi's principle of "making every delicious food available in the store" is still maintained today. This made Kaji Mart a most popular store among the large number of rivals and attracting customers even from faraway.
Kaji Mart is fastidious in products development. It has stuff sample party and only the products agreed by all stuffs can be accepted. Kaji Mart focused on Japanese popular and high value item gyoza, and developed original gyoza of Kaji Mart. Key point for daily dish is it's temperature, but Kaji Mart solved the problem by well flavor, and the gyoza received recognition even it getting cold. Kaji Mart also chose the well-fitting sauce for the gyoza.
A senior aged gyoza-making stuff has become a fan of the gyoza. He said: owing to uncertainty of imported raw materials, we had been kept away from gyoza of supermarkets. But the gyoza of Kaji Mart is delicious and safe to eat. I often buy gyoza of Kaji Mart.
At first, we made 1000 pieces one day and supplied one store only, the analysis data proved the high profit rate of the gyoza that its profit always kept in top five in delicatessen. With intensifying of sales activities, the production has been increased to 2,000 pieces per day, and supplied four stores.
For production increase of gyoza, two senior aged employees were employed as full-time stuff. The machine is so easy to use that even senior aged people can operate without any difficult. Lower labor costs improved the efficiency.
Kaji Mart plans to supply all stores and restart frozen gyoza business in the future. They are also considering the possibility of whole sale business with Kaji brand.

We bought machine five years ago. We made frozen gyoza and sold in the store. With the increase of customers including buffet-style restaurant, we made 6,000 pieces a week. The store is filled with kinds of machines and equipments of making ham and bacon, etc., the compact size of the gyoza-making machine made it possible to make gyoza in the limited space.
The owner showed me his working place. He assembled the gyoza-making machine and made it ready to work very quickly. Simple dismantling and assembly is a strong point in sanitation management.
Tonkii's business covers pig farming, processed meat and restaurant. Original mixture feed with no chemical condiments is used in pig farming.
Following principle of local production and local consumption, all the materials are local products. The ingredients varies seasonally, after cabbage season, celery is usually used for ingredients. Although such particularity resulted in high cost of one piece for 40 Yen, the gyoza has been recognized as a reliable and safety brand. We receive lots of inquiries every day. Another particularity of our gyoza is preparing the ingredients the day before and wrap just before selling.
Wrapping gyoza manually is not an easy work for an untrained labor, therefore, hiring a part-time labor is unprofitable. The productivity remains low even by a skilled labor. Machine-made does not change taste. In fact, machine-made is uniform in size and weight, easier in quality control and making production deliberately.
